Chef James Brooks has served as the Executive Chef at Presbyterian Village North (PVN), since August of 2024. As Executive Chef, he oversees the entire flow of food through the kitchen, beginning with menu development and product ordering to food preparation, storage and final execution. We caught up with Chef James for a Q and A to learn more about him. Read about this hard-working teammate below.
What are you passionate about regarding your professional role?
Professionally, I am passionate about growth, not just for myself but also for my teammates. I enjoy finding ways we can all keep improving together.
Favorite memory/moment to date during your time at PVN:
My favorite memory was preparing the December Candlelight Dinners last year. It was great to see the culinary team execute two high-end plated dinners back-to-back nights. The energy was high and it was exciting to prepare something different from our typical menus.
What do you think sets PVN apart from other senior living communities?
What sets PVN apart is the quality of our teammates and the genuine relationships they build with our residents.
What is something that makes you feel proud?
I am proud of many things, but nothing compares to helping raise my two children. My 18-year-old son, Casche, and 10-year-old daughter, Stella, make me very proud.
On the weekend, you can find me:
If I’m not working, I’m usually tackling projects around the house or taking my daughter to one of her dance events.
What are some of your favorite foods and restaurants?
Lucia is my favorite spot in Dallas. I recommend ordering any of their starters, especially the ones with off-cuts or unique ingredients. I also enjoy visiting small taquerias for al pastor. I also love good Chinese takeout – I’m a sucker for orange chicken.
Tell us about your hobbies:
I enjoy working in the garden with my wife, playing music and going to all kinds of concerts. This year, I’ve been able to see Deftones and Wilco live.
Share about your family:
My wife, Liz, and I have two children, Casche and Stella, as well as two Shih Tzus named Pixie and Chunk.
How would your friends describe you?
My friends would describe me as quiet and even keeled.
What’s something that people might be surprised to learn about you?
People may be surprised to know that I play guitar in a band. We were formerly known as Alternate State, but our new name is Mixtape Monarchy. We’re a cover band playing rock from the ’80s, ’90s and early 2000s. Because of our busy personal and professional schedules, you can find us playing at different bars or restaurants a few times a year.
