Kirstin Taylor serves as the Director of Nutrition for Cooper Clinic. Her 15 years of experience as a registered dietitian includes acute-care hospital-based nutrition (in- and outpatient), private nutrition counseling, sports nutrition, diabetes nutrition programing and clinical management.

Kirstin earned her Bachelor of Science in Nutritional Sciences from The University of Oklahoma before completing her Master of Science in Nutritional Sciences from the University of Connecticut where she also served as a Sports Nutrition Graduate Assistant. In this role, she performed educational team talks, developed meal plans for athletes and counseled athletes on basic nutrition.

Before coming to Cooper, Kirstin served as the Director of Food and Nutrition at Texas Heart Hospital Plano where she managed the nutrition department of the acute care hospital, production of patient, cafeteria and catered meals and oversaw inpatient and outpatient clinical nutrition practices. She is a member of the Academy of Nutrition and Dietetics and is also OSHA and ServSafe certified.

In her free time, Kirstin enjoys traveling with her husband and daughter and watching her daughter play soccer.


Haley Sloat and Ashton Gray are Exercise Physiologists at Cooper Clinic. Playing vital roles on the preventive health team, they administer exercise stress tests, conduct health screenings and provide personalized exercise consultations tailored to each patient’s unique needs, goals and medical history. They are dedicated to helping individuals lead longer, healthier lives by preventing chronic diseases through evidence-based exercise and lifestyle modification.

Ashton holds a Bachelor of Science in Kinesiology and Rehabilitation Science from the University of Hawai’i and a Master of Science in Exercise Science and Wellness with a concentration in Fitness and Performance from Liberty University. Her academic background, combined with hands-on clinical experience, allows her to translate complex exercise science into practical, impactful guidance for individuals at every stage of their wellness journey. Outside of work, Ashton enjoys spending quality time with her husband and their dog, running, strength training and staying active through various forms of exercise. She also regularly experiments in the kitchen with healthy recipes to support her wellness.


Haley earned her Bachelor of Science in Exercise Physiology from Midwestern State University. Her diverse experience allows her to blend clinical knowledge with real-world fitness training principles, making exercise accessible and effective for a wide range of individuals. In her free time, Haley enjoys reading, exercising, spending time outdoors, cooking and living life with her loved ones and cat.
